A good swap for Barley Wine
Hi Lindsey
Not really a question but I looked up alternatives for Barley Wine for Delia's Christmas pudding. I make enough for friends and family because it is just the best recipe for Christmas pudding by a country mile. You have strong cider which I am sure is great.
I always make them this time of year and getting hold of Barley Wine is impossible. Last year I used Duvel Belgian Beer and it was perfect. I then managed to get Gold Label closer to Christmas and compared the 2 options. I now prefer Duvel as an ingredient generally but it is widely available. I just wondered if it was worth adding it to your tips although it is a branded product not a generic one.
As I make so many I steam using a Instant Pot pressure cooker. I have to guess the times for this based on normal steaming to pressure cooker guidance from manufacturers. It seems to work fine but if there was ever a time for updated guidance on this issue it would be great to add to the recipe. With power costs rising and to avoid steaming up the house for hours on end is this something you would consider?
Kind regards
Steve
