About Delia's Irish Fruit Loaf...

I made the Irish fruit loaf in Delias how to cook book. I followed the recipe perfectly and my loaves were more of a rock cake style than fruit loaf!! Where did I go wrong?!? Whilst mixing in the egg, milk, flour and nuts it was so dry and hard to mix. The loaves are light in colour not dark! I thought it was dry when mixing but the fruit would create moisture when cooking. Apparently not. Any help would be appareciated!

Thank you for the reply. I believe the recipe I followed in the book is incorrect! The video shows ingredients for one loaf, the book is for two but still only states to use 1 egg and 2 tablespoons of milk! What a shame I had to throw them out.

I’m so sorry that your loaf cakes didn’t work.
The ‘How to Cook’ version was double the recipe to make two loaves and had a much higher proportion of sugar so it didn’t need 2 eggs. The Cake Book version was adjusted to reduce the sugar content and be consistent with the other loaf cakes in the book. As sugar melts on heating, and sticks on cooling, less egg is needed to moisten and bind the ‘How to Cook’ version of the recipe.
Both versions were thoroughly tested before being published.
