About Delia's sponge cakes

Can you please let me know what Delia Smith calls 'spreadable butter'. Is it soft unsalted butter or can I use Stork spreadable in a tub? Also if oven temperature suggests 170C - what temp should a fan oven be at? I looked this up on your site but it seems to suggest 20 degrees less than 170 which seems fairly low for a sponge but does this work?
Thanks for your help. The recipe I am looking at is the Iced Lemon Curd Layer Cake which has just recently come up on the site as Cake for the Day.
Hello,
For spreadable butter we use the type in a tub that has a spot of oil in it so it is soft from the fridge. Yes you can use stork.
We have a video about choosing fats here…
Choosing Fats for Cakes
The electric oven temperatures are for conventional heat and yes, we do recommend reducing the temperature by 20 degrees when using a fan setting. That reduction is fairly standard and I’ve tried it in my oven and it works. However, you know your oven and if you know a sponge cake works in your oven on a fan setting at a higher temperature, I’d do that.
Kind regards
