About souffles in the cookery school

Hello Lindsey a little bit of help please with planning for a family visit.

I've just watched the Souffle video and wondered

a) how long can I keep the Roquefort Cheese souffles in the fridge before the second bake - days?

b) could I use this same principle (tewice baked) with the other 2 souffles in the video, eg potato, spring onion, cheddar and chocolate?
