Alternative to aubergine

Hello Lindsey I'd like your help please with suggestions for some vegetarian main meals.
I've already earmarked Delia's Roast Vegetable Lasagne and I'm looking at Alex Mackays Lentil Moussaka but one of the party is allergic to aubergines. Could I sub courgettes or Squash or can you suggest something else?

Hello Eileen,
I think Alex’s recipe will work well with courgette.
For Delia’s lasagne I would replace the aubergine with fennel. We use fennel in the couscous salad which is a similar mix and it’s lovely.
