Birthday Cake Planning Ahead

My husband's birthday party is on a Saturday but we will be away on the thursday and friday immediately before it.
If I make an ultimate carrot cake on the Wednesday, can I freeze it before doing the mascarpone cheese covering? I would defrost it on the Sat morning and then put the mascarpone cheese covering and filling.
Or can I keep it in an airtight tine until the Saturday - especially as I am running out of freezer space.....

Given those options I would choose the first. It will be safe to eat if you fill and chill on Wednesday but it won’t be as good as option one. Obviously if you freeze it you can make it even earlier than planned and the mascarpone topping can be made a few days ahead and kept in the fridge.
