Black Beans!

I’m planning to make Delia’s Black Bean Chilli with Avocado Salsa. The beans stocked by Waitrose are called black turtle beans & are quite small (compared to red kidney beans) -is this the correct bean for the recipe?

This is a good question!
We agree that the small Black Turtle Beans, that seem to be everywhere now, are smaller than Delia used when she developed the recipe.
These small shiny beans seem to be firmer than the other which like you say, like the size of a red kidney bean.
I’ll keep an eye out and if I find any or hear of any that are larger I’ll let you know.

Thank you. The smaller turtle beans were the only ones available in my local supermarkets so I used them. I also found they were firmer - I soaked them overnight as advised but they were still quite hard so I boiled them for 10 mins & left them in the water for 3 hours. They were still quite firm but soft enough that I thought they’d be ok after cooking which they were. So, in the end they were fine, in fact I preferred them to red kidney beans, including the fact they are smaller, but you have to plan ahead if you’re going to use them.

I saw some black beans in Sainsbury’s this week (no mention of any turtle!) so I’ll try those and see how they are.
