Regarding Fromage Frais Cheesecake recipe, what will happen if I use half-fat curd cheese? I can’t find full fat anywhere. Thanks.

We haven’t tested this with half-fat curd cheese. It will obviously be lighter in calories and I expect it will also be less firm but I think it will set ok.

Thank you so much. I am having a terrible time finding even basic ingredients for the fromage frais cheesecake where I’ve moved to. Waitrose does not have available. Is best substitute for fromage frais greek yougurt? Should I give up and go for another recipe? I was also going to make the nougat ice cream but if I don’t have fromage frais same question as above!

I have seen curd cheese in Sainsbury’s as part of their polish range, but I expect that the supply of that will depend on your region. The full fat version is lower in fat than the fat rich version that we used to get form the deli counter.
You can use full fat cream cheese instead of curd cheese.
You can use fat-free fromage frais (which seems to be available just about everywhere) - I would substitute the fromage frais with 300ml of fat-free fromage frais combined with 50ml extra thick double cream or full-fat crème fraîche. And you, you could use thick 5% fat Greek yoghurt instead of fromage frais too.
