Chilling bread rolls before baking

Hi Lindsay. I was wondering do you think it would it be possible to make the dough for Delias Breakfast Babs from the cookery course up the night before i want to bake them and store the dough in the fridge overnight so all i had to do was shape and let them rise in the morning? I made them last week and they were so good but took quite a long time to rise so wonder if i could do the first part tonight to cut down the time in the morning.

Hello,
You can do that but the chilled dough will take a while to warm up and rise.
You can prove, shape the rolls and arrange them on the tray, cover and chill so that all you need to do is remove them from the fridge and leave to rise the next day, but they will need 3 to 4 hours to warm up and rise before they will be ready to bake.

I did make them last night and and quite surprised the dough did double in size over night in the fridge. This morning i popped the shaped rolls in an oven that has just been ever so slightly heated for a minute and turned off just to get them doing slighty quicker. They turned out well but i probably didnt save myself much time in the end.
I've now been told for as long as im off during this lockdown i can continue to make these for the family because there definitely much better than shop bought!
