I've just made the classic Christmas cake but couldn't get the mix to go 'smooth and fluffy. It seemed to be too wet but even adding more plain flour didn't help. Any ideas what I may have done wrong?

Could your scales be inaccurate?
Did you use just the zest of the lemon and orange?

I did bake it. It appears to have turned out ok. I hadnt put the zest in at that point. It was at the mixing stage prior to adding fruit etc.
