

Hi Lindsay, I made Delia’s famous Christmas cake at the end of October last year (2020). Because of Covid I knew I wasn’t going to see anyone so I didn’t marzipan or ice it. Instead I fed the cake, double wrapped in grease proof, then in foil, and it’s been in a cake tin ever since. Will it still be ok and, if so, can I marzipan and ice it this December...?

I’m pretty sure that it will be ok. We’ve recently eater our cake made 12 months ago and it was lovely.
Unwrap it and check the appearance and aroma. If it is firm, even in colour, smell of fruits and booze, and has no signs of mould it will be fine.
