Hi Lindsey
Advice on an occasional problem with turning out my Christmas pud ( I have been making Delia's recipe for 30+ years) I always put a ring of greaseproof at bottom of my enamel pudding bowl . Re- steaming is a bit haphazard on Christmas day but sometimes it does not turn out in one piece. Is this due to under or overcooking would you say?
Thanks
Joy

Hello Joy,
I have never used an enamel pudding basin but we always make sure that the basin is very well buttered, and we are careful the 8 hour steam is continuous and find doing works. Then 2 ¼ hour steaming on the day.
Kind regards
Lindsey
