Coconut and Lime Cake question
Asked on 9 Apr 2020 by Jarko
Hi Lindsay, I've made Delia's Coconut Lime Cake from the Summer Collection book many times, but I notice the online recipe has been updated and altered. The online recipe states that 2 limes are needed for the cake and 1 for the icing, yet the method describes 2 limes needed for the icing, so I'm confused. Any clarification on how many limes are needed would be great. Thank you.
Hello,
It’s 2 in the cake and 1 in the icing.
For the icing the zest is removed from the lime. Then the pith cut off before its segmented (any larger segments get halved). The segments and any juice that is caught goes into the icing.
Hope that helps.
Best wishes

Thanks Lindsay. That's how the book does it for sure! But the online method description needs a tweak as it is confusing. It's a great cake!
Hi again,
My previous answer was incorrect, sorry I should have read it more carefully!
It’s 2 limes in the cake and 2 limes in the icing.
I’ve read it through a few times and checked it against Delia’s most recently published version and the online version is exactly as published.
All best wishes

Thanks so much for following up Lindsey. It did seem that two were needed for the icing, although the listed ingredients had just one. Glad I'm clear before I start baking. Thank you.
On a different note, it's very hard to get 8" round tins in the USA. They mostly sell 7" and 9". I have one 8" tin, but under the current circs, I can't really shop around to find another (or afford another to be honest). Would it work to bake the entire mixture in one pan and then slice it in half? If so, would I need to adjust the baking temp and time? Otherwise, I was planning on baking each half one after the other using the same tin.
Hello,
Faced with the same problem I’d probably opt for baking it all at once in one 8 inch tin if you’re doing the 3 egg ‘Summer Collection’ version or one 7 inch tin if your doing the ‘Cakes Book / Online’ 2 egg version. Unless that is, you might have two 7inch tins, then I’d just do the 2 egg version as is.
