

THAI CREAMED COCONUT CHICKEN WITH THAI GREEN RICE
I made this yesterday from 'How to Cook Book One'. The taste was lovely and I'll definitely make it again. However, the coconut milk seemed to separate out when I reduced it down by boiling. It looked as though it had curdled. The coconut milk came out of the tin unblended (no amount of vigorous shaking made any difference), but I did manage to blend everything together in the pan and it looked fine until I added the chicken and then simmered/boiled again. Could I have been over boiling? Any suggestions?

I’m sorry to hear that. It sounds like the coconut milk was a bit thin. We often use the thicker creamed coconut and reduse the cooking time. I’d use a couple of cans to replace the 400ml.
