Cooking unstuffed turkey

I'm cooking a traditional Roast Turkey Christmas Day dinner for my family for the first time. On Delia's site the recipe (first shown in a previous Delia Christmas cookbook) assumes we will be stuffing the turkey with stuffing. I won't be doing that as I'm cooking it separately. Does that alter either the cooking times, temperature or Turkey recipe at all? I don't want to mess up Christmas Day dinner!..

Hello Nick,
Delia always stuffs her turkey but for an unstuffed 14lb bird I would allow about 3 hours.
Using conventional heat….
220°C for 30 minutes
170°C for 2 hours
200°C for 30 minutes
Obviously you still need to test to make sure the bird is cooked. I would test when the foil is removed and if the juices run clear you can give it less browning time.

Thank you for your quick reply. Can I be a nuisance and ask a couple more questions please on this?
My turkey will be between 4kg-4.5kg and I'll be cooking in a fan oven. How does that change the timings you quoted above? `(still an unstuffed turkey).

This is not a tested recipe but I would say…
200°C (fan) for 20 minutes
150°C (fan) for 1 ¾ hours
180°C (fan) for 15 - 20 minutes
Obviously you still need to test to make sure the bird is cooked.
