Creole Cake rising too high in the middle

Hi Lyndsey, could I ask what I am doing wrong please, I made the Christmas Creole cake however, when in the oven cooking it rises in the middle, could I ask what you think I might be doing wrong please?

Hello Lee,
Generally, it is when the oven temperature is too high.
An oven thermometer is useful.
If you’re using a fan setting it should be 120C for Creole Cake.

Thank you Lyndsey, I am using a conventional oven however, I have thought that sometimes it gets hotter than what it states. I will invest in a oven thermometer.
