Feeding the Christmas Cake
Asked on 25 Nov 2020 by Lynda Walker
Hi , I followed Delia's Christmas cake recipe and set my oven at 140 degrees for 4 and a half hours, but alas my oven is fan (no reference is made to fan ovens :( and it is overcooked and somewhat hard!! Are there any recipes out there for over-cooked Christmas cake, or anyway to rescue it?
I have cooked another one and it is fine...:) . Feeding it but wondering how often and how much brandy to feed it. Thank you.
Hello,
All of Delia’s recipes that require and oven are tested using conventional top and bottom heat, so if you are using a fan oven, you need to reduce the oven temperature by 20 degrees.
You say ‘overcooked’ but you don’t say burnt. If it isn’t burnt I’d feed it and also use a pastry brush dipped in Armagnac or Brandy to apply a coat of alcohol all over the top and sides of the cake, then wrap in parchment and foil and pop it in a lidded container in a cool place for a week or two before feeding again.
I ‘feed’ an 8 inch cake with 2 - 3 teaspoons about 6 times so between 60 and 100mls in all.
If you search ‘leftover Christmas cake recipes’ there are a number about including brownies, trifle, tarts and bread pudding.
Kind regards
Lindsey
