I hope you are having lovely Sunday weekend.
Would you be able to help me to demystify my never ending saga as to how to work with offcuts frozen hot water pastry after I put them out of the freezer.
In my experiment, the pastries are tough to handle even after a day in the fridge.

Hello Helen,
I prefer not to freeze hot water crust as it is easier to work with when fresh and warm.
However, it is possible to freeze it if you like.
When you defrost it you need to leave it to reach a warm room temperature to be able to work with it.
