Help with baking Brownies

I have followed Delia's recipe for Brownies baking them in Delias oblong tin. The difficulty I have is knowing when they are cooked as when pressing lightly after 30mins the surface cracks and flakes, no springiness . Leaving for longer the brownies are more cake like. Any suggestions?

I have tried both conventional and reducing the temperature for fan assisted.

It may be that your oven is running a little high. The surface can crack a bit but it sounds like the surface of yours is dryer and therefore overcooked.
We have several ovens between us which give varying results, so we use oven thermometers to check them
I think an oven thermometer will reassure you and then at 30 minutes perhaps just the lightest of touches with your little finger. Or if it looks evenly coloured and set across the top at 30 minutes it should be cooked and will firm up as it cools.
