From a head of garlic remove a clove and split the skin. Sometimes in the winter there is a little green shoot inside and its best to remove this as it tastes bitter. There are three ways to crush garlic. Firstly, by sprinkling salt onto a surface, pop the garlic on top, using a broad bladed knife crush the garlic into the salt. Another way is to use a garlic press and, finally, you can puree garlic in a pestle and mortar.
