I want to make Delia's Mincemeat Christmas cake for a last minute wedding cake but need to upscale the ingredients for a 10" and 12" cake.

As we haven’t made this recipe in those sizes I could advise how to increase the quantities, but I’m not sure that the cake will bake well at the same temperature and for how long.
In the same situation I would do a classic Christmas cake. It still tastes great without the maturing time and has a proven record over time.

I don't know how much time you have but I would do classic and feed once or twice.
