I think that half of the Christmas Sherry Mincemeat Cake recipe will work in a 6 inch tin.
You could use 2 medium eggs or if you’re using large ones beat them and use ¾ of the mixture.
I would take a peek after an hour to see how it’s doing.
Remember to reduce the temperature by 20 degrees if you are using a fan setting.
