

Hi Lindsey, can I used Light Butter in the Victoria Sponge & your other sponge based cakes? Or even subsitute butter altogether with soft margarine? I know the taste might suffer somewhat but for health reasons, I would like to cut down on the amounts of fat in my baking.

Hello Margaret,
You can make a sponge with a reduced fat butter. We haven’t tested one using a very low-fat version.
I’d opt for the soft margarine if you’d prefer not to use butter.
Or you could try a griestorte!
