I'm looking to do a vanilla sponge drip cake of 3 layers. I am using 6 inch tins. How do I adjust the ingredients and cooking temperature of Delia's classic sponge cake to do this?

I would do a 4 egg mixture for a fashionably tall 6 inch sponge cake. Either divided between 2 deep cake tins or 3 deep (at least 4cm) sponge cake tins.
The cake in the sponge cake tins will take about 30 – 35 minutes to cook or the cake in the deep cake tins about 45 – 50 minutes at 170C in a conventional oven.
Personally, I favour sponge cake tins (sandwich tins).
