Making an adjustment to Dundee Cake
Asked on 23 Nov 2019 by Carol
Hi - I always make Delia’s Scottish Whisky Dundee Cake with my niece. For Christmas. We’ve always used a 30cm round cake tin and it has always been a success. This year we’d like to divide the cake into 2 after baking so I’m wondering if I switch to my oblong loaf tin which is 20x10cm, will I need to adjust the cooking time / temperature at all? The loaf tin holds the same amount of water (2 litres) as my round cake tin. Your advice is appreciated. Kind regards. Carol
Hello Carol,
Did you mean to say 30cm (12inch)?
If so have you been making 3 time the recipe and then planning on 1 ½ times the recipe in a 2L loaf tin twice?
Thanks
Lindsey
Hi Lindsey - I did indeed mean to say 20cm!
How much mixture do you use in the 30cm round tin that you use and how long have you baked that for?
Sorry I have not been clear! My reference to 30cm is wrong. What I meant to say is that I used a 20cm tin (per the instructions). I have always followed the recipe precisely (as it is in the book). What I hope to do this time is use the same recipe but used a different shaped tin (one that has the same volume / capacity as my 20cm round tin). Sorry for the confusion.
Hello Carol,
I’m assuming that you use the original cakes book which is a 3 egg mixture in a 7 or 8 inch tin and baked for 2 – 2 ½ hours?
In the most recent version, we use the 3 egg mixture in the 18cm round tin and bake for 1 ¾ hours so based on that I would check your 10 by 20cm cake at 1 ¼ hours. I think it would probably need 1 ½ hours in all.
Best wishes
Lindsey
I’ve created confusion! I meant to say that I have always used a 20cm round tin and followed the recipe exactly. This time, I’d like to use my loaf tin (same capacity as my round tin). Hope I have cleared this up. Kind regards. Carol
Dear Carol,
Yes, I understand that but there are a few published recipes and the cooking times differ.
I would bake the 3 egg mixture in your 10 by 20cm loaf tin and check it at 1 ¼ hours but think it will probably need 1 ½ hours.
Kind regards
Lindsey
Your advice was bang on Lindsey: it need 1 hour and a half. Thank you so much.
