Making sponges ahead

Hi. I'm going to be making a birthday cake soon and will need to chill it in the fridge a few time for the decoration. Can you recommend a good sponge recipe for this please? I used Victoria sponge last time and it went really dry very quickly.

Sponges are best eaten fresh or if they need to be made ahead, they are best frozen.
The Ultimate Carrot Cake, Coffee and Walnut Cake and Austrian Coffee Cake are moister and will keep a couple of days in and airtight container in a cool place and can be decorated and then kept in the fridge on the day they are going to be eaten.
Or Grated Chocolate and Almond Cake can be made and decorated a couple days ahead and kept in an airtight container, again in a col place.
