

I have made Delia's Batch Bake Ragu Bolognese recipe (and the related recipes) for years. However, my husband was recently diagnosed with a health issue and has been advised to eliminate red meat from his diet. I wondered if minced turkey or Quorn would work as a substitute or would they compromiser the favours.

Hello Eileen,
The cooking times vary for beef, turkey and quorn mince.
So in both cases if making a ragu I would cook the sauce first on its own for an hour or so, then for turkey – lightly brown the turkey, add it to the sauce and simmer for 30 minutes. For a ragu using quorn, again cook the sauce first, stir in the minced quorn and simmer for 5 minutes.
