Hi there. Hope you are well? Just a question about Delia’s Shepherd’s pie. I’ve been making this for years and love it. Sometimes my leeks go pink when cooking in the oven. Any ideas?

I’ve never had a batch of leeks turn pink, but I’ve has a batch of garlic turn green!
Either way it’s to do with the science of the pigmentation in the vegetable.
I can’t give any more details as to why and when!
I do know that we always use most of the green part of the leek as well as the white so perhaps we are less likely to spot it!
