Preserving emergency!

Hi Lindsey
EMERGENCY! I've just sterilised my jars before bottling Delia's Dark Seville Orange Marmalade. I decided to sterilise the lids too and, to my horror, they've all melted! How will the marmalade keep if the jars are covered with a wax disc and a cellophane cover tied on with a rubber band?

Don’t worry, you did the right thing to think quickly and use the cellophane covers instead.

Your marmalade will be fine.
