Quantity of pastry for apple pie
Asked on 11 Feb 2022 by Raeleadee
Good afternoon!
In Delia's apple pie recipe there is an amount of 110g of flour however in the video it mentions that more pastry is needed for the pie. I imagine 110g of flour is not enough to make a double crusted pie so was wondering if you could please let me know what quantity of the pastry recipe should be used for this size of double crusted pie. Thanks!!

Hello Raeleadee.
The apple pie is made with a very thin crust. It is 110g flour.
The tin use for the base is very shallow so slightly less that ½ of the dough is rolled for the base.
As the apples are piled so high the slightly larger piece of pastry is for the top.
Nothing gets trimmed away, just pressed together, folded over and pinched.
It is of course possible to increase the amount of pastry and roll it a bit thicker if you like a thicker crust or find it easier to manage.
Best wishes
