In a small bowl combine chopped
red pepper, onion and coriander with sugar, chili-garlic sauce,
lemon juice, soya sauce and oil. Beat a little to blend.
Pan fry using 1/2 tbsp. of oil or
broil the orange roughy.
Upon completion of cooking,
transfer to a serving plate and dress with several tablespoons
of the reserved sauce.
Garnish with fresh coriander,
citrus fruit and bell peppers.
