Ingredients
1/2 cup Japanese White miso
1/2 cup Japanese Cooking sweet sake
1/2 cup Medium dark Maple syrup
2 fillets of Orange roughy
 
Method
Combine first three ingredients in deep cooking pan. Stir well and mix with whisk on med to slow fire. (Do not let it boil)

As soon as the ingredients have combined set on the side and let it cool down to room temperature.

Combine above sauce in large zip lock with the fish. Cut into serving pieces if you like.

Close the seal and let it marinate for two to three days (turn the Bag twice or so per day for even steepinchess of sauce)

Remove from sauce, discard sauce and bake in the oven at 325F until golden brown.
