Ingredients
1/4 cup white wine
4 orange roughy fillets, approx. 6 oz. each
2 tablespoon. olive oil
2 tablespoon. fresh basil, chopped
1 tablespoon. black pepper, freshly ground
grated zest of 2 lemons
 
Method

Preheat oven to 325F degrees.

Pour wine into a baking dish large enough to hold all fillets in a single layer. Brush both sides of fillets with olive oil and lay in baking dish.

Combine basil, pepper and zest together. Sprinkle mixture on fillets.

Bake for 20 minutes or until fish flakes easily when tested with a fork. Carefully remove fillets with a metal spatula.

Discard cooking juices. Serve immediately.
