Ingredients |
4 boneless skate filets, trimmed
(4 ounces each)
salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1/2 cup pitted Sicilian olives, halved
20 cherry tomatoes, halved
2 tablespoons capers
3 garlic cloves, chopped |

Method |
Season skate filets with the salt
and freshly ground pepper. Heat a sauté pan with the
extra-virgin olive oil and sauté the skate on both sides until
lightly browned and cooked through. Remove from pan and reserve
to the side.
In the same pan, add the Sicilian olives, cherry tomatoes,
capers and garlic; sauté for 5 minutes to marry the flavors.
Pour on top of skate and serve.
