MARINATED MACKEREL

Ingredients:

12 small mackerel
1 glass white wine
1/2 glass vinegar
2 onions
1 carrot
2 shallots
Parsley
Thyme
1 teaspoon salt
3 peppercorns
Bay leaf

 

Method:

Cook the white wine, vinegar, onions, carrot, shallots, parsley, thyme, bay leaf, salt and pepper in saucepan over a medium heat for 20 minutes.

Pour this stock over the mackerel.

Put in oven at 325°F (160°C) for 20 minutes.

Take out of oven, leave to cool.  Serve with extra marinade.
