Sole without alcohol!

Hello Lindsey. I have Dover Sole which I want to cook for 4 at the weeklend but I cannot find a single Delia recipe that does not include alcohol. Can you suggest one that I could tweak without compromising the flavour?

I think we just have two recipes.
In both the wine can be replaced with fish stock and a little lemon juice or white wine vinegar.
