Hope you’re well. For summer, I’m preparing the Giardiniere Pickles (Italian Garden’s pickles) as it needs a month’s time or so to soak the veggies. I can’t seem to find white vinegar this week in the French supermarket shelves, which is a bit surprising - apart from a tiny jar of 200ml “degustation” up market ones. Can I use white balsamic vinegar instead? Or they seem to have a lot of alcohol vinegar (8% acidity) . But if I could I would choose the white balsamic vinegar and this one I found has an acidity of 5,6%. Would this white balsamic vinegar do the trick in this recipe instead of the white wine vinegar? I’d be grateful for any advice you could give me. Thank you, have a lovely day, Ed

Hello Ed,
White balsamic is sweet.
We use chardonnay vinegar.
Maille do one that we can get here so perhaps you’ll find that one!
