Vegetarian Guests!
Asked on 19 Dec 2022 by Simon01
Hello Lindsey. I've just spotted a Vegetarian recipe of Delia's I'd like to try over Christmas - Sprouting with Chilli & Sesame Seed Dressing. What would compliment it?
So far I'm cooking
Luxuriant Vegetable Pie
Baked Halibut
Orecchiette with Walnut Sauce
Pappardelle Pie with Wild Mushrooms
Turkey
Thanks.
Eileen
PS Just saw an advert saying Delia is being interviewed on Radio 4 over Christmas. Do you know of a time and date? Can't miss that nugget!!
Hello Eileen,
We often have that with Thai Chicken. Sometimes the same dressing on green beans. Its good with Teriyaki salmon too.
If you want a vegetarian dish I would do one of these…
Roasted Red Peppers
Mashed Black-eyed Beancakes with Ginger Onion Marmalade
Spiced Chickpea Cakes
Here is that link to the radio programme info…

That's absolutely great and thank you for your prompt response.
The Spiced Chickpea Cakes I can tell you are 5 star but I've never tried the Beancakes with Ginger Onion Marmalade and they are going on the "to try" list for the NY that's for sure. . Only sticking point for me would be the alcohol - can I sub with non-alcohol?
Best wishes.
Eileen
Yes, you could do white grape or apple juice.
Fab. Apple juice is then. Last question - would they freeze?
Yes, you can freeze these.
Cook as per recipe and cool completely. Freeze the cakes, interleaved with baking parchment, in a container with a tight-fitting lid.
Cool the marmalade completely and freeze in sealed and labelled polythene bags.
Freeze for up to 3 months.
Defrost overnight in the fridge, and reheat in the oven for 20 minutes at gas mark 4, 180°C.
All best
Lindsey
Magic. Thank you.
