Your vinaigrette recipe is fantastic, I've never been any good at dressings before. But....I have made a big batch using Himalayan salt crystals and it's a bit too salty, any advise to dial down the salt please?

I would make another big batch without salt and mix both batches together.
It will last longer but at least you can use it.

I wanted to pass on my thanks to Delia.... In the late 70s...As a young 20 something, visiting my parents in law who lived in Ibiza, I offered to make them a meal.
MiL had a Welsh dresser in kitchen stuffed with cookery books. Meant morning to me... But I went thru them and Delia's presented itself as V straight forward, even without many photos, I immediately understood the value of clear instructions, easy to understand. I made something??
Soon after, for my birthday, I asked for the first book, which has been my Bible thru all these years.
Fashionable/celeb cooks come and go ( with big budgets) but Delia is always my go to.
Currently staying a few months in NZ with a vegan.. And I'm researching for choices and inadvertently loving the Cookery school and still learning. Thank you Delia! And it's wonderful too have online and freely available. x
