

I intend making Delia's Dundee cake as my Christmas cake this year, soaking the fruit in whiskey overnight. My question is how soon before Christmas should I make it? Will it keep if I made it mid November for example, or would it dry out made then. Would I be better leaving it to around the time of Stir up Sunday when I make my pudding?

Hello,
Because of the smaller amount of fruit, a Dundee cake does not keep like a rich fruitcake.
It will keep for a week or so wrapped and stored in an airtight tin, but if you want to keep it longer, I would freeze it, preferably on the day that it’s baked.
Soaking the fruit in some whiskey will be very nice however I would only use about 50mls as the fruit will probably sink if you use too much.
