When I read one of your recipes the oven temp was advised to be 200c.
I have a fan oven, so would I have to set it to 180c?
If so, wouldn't it be a good idea to have both setting to cover conventional and fan ovens?

I appreciate what you are saying, and you’re right that generally it is advised when using a fan setting to reduce the conventional oven temperature by 20 degrees.
However as all of Delia’s recipes that require an oven have been thoroughly tested using conventional top and bottom heat, and fan oven performance and therefore results vary, it is not possible to confirm that reducing the temperature by 20 degrees is going to be accurate for all ovens on a fan setting.
If you have had consistently good results following the ‘reduce by 20 degrees’ suggestion then you can be assured that this reduction is suitable for your oven, but other readers may find that a reduction of less or more than 20 degrees works better.
So, I hope you understand why we are unable to confirm the temperature for any ovens using a fan setting.
