I asked the brilliant sommelier Michelle Shepherd at Delia’s Restaurant, and this is what she says…
“I’ve chosen the one red and one dessert wine. Both suit the Chocolate Truffle Torte perfectly.
The Chocolate Torte is a rich dessert, so the wine pairing needs to be wine with equal characteristics.
Lighter reds tend to be higher in acid which in return cuts through the richness of the dark chocolate, but sometimes not enough body in the wine to stand up to the rest of the flavours of the dish.
I’ve chosen a Barbera 150+1 2021 Piemonte Italy, a medium to full bodied red.
Vibrant and Fruity, first impression would be of a full-bodied wine but as it pairs with the flavours of the Torte it then softens and the juicy red fruit flavours become apparent, leaving a lasting finish of chocolate aromas.
Also, being fairly young the acidity I mentioned earlier will be present so the wine and food balance nicely together.
If a dessert wine is preferred then I would recommend.
Cline Cellars Late Harvest, for people who love sweet wines.
The grapes are left on the vines until very late in the season to achieve maximum sweetness.
Along with its balance of red and black fruit aromas and hints of dark Chocolate flavours a great pairing with any rich chocolate desert.”
