I make Delia’s Quiche Lorraine often.
I rises beautifully but on cooling collapses and does not look anything like the one in the recipe
Where am I going wrong

Hello,
The filling does rise a bit as it cooks in the oven but always sinks back as it cools.
If it rises too much it may be that the oven temperature is too high, or the quiche has been baked for too long.
It may also puff up more if there is too much air in the beaten eggs.
I’m not sure if you have seen our cookery school video but it does show how ours looks when baking and when rested.
