Thinking of making this lasagne for the first time - do you think it's still necessary to drain the aubergine and courgettes? Not sure if this is done now?

Hi there. Hope you are well? Just a question about Delia’s Shepherd’s pie. I’ve been making this for years and love it. Sometimes my leeks go pink when cooking in the oven. Any ideas?

Would you be able to help me to demystify my never ending saga as to how to work with offcuts frozen hot water pastry after I put them out of the freezer.
In my experiment, the pastries are tough to handle even after a day in the fridge.
